No exaggeration! My now Husband made me these very pancakes (pictured above) the first time I went to stay with him, and that was it, love at first bite.
They aren’t like the crepes i grew up with (though i do love the traditional lemon and sugar versions). They are fluffy, filling, and spongey. They make a hearty breakfast, brunch, or dinner. They can even be eaten cold in lunch boxes (if you have any left).
We love to cook and eat these on Birthdays, Anniversaries, and of course Shrove Tuesday.
The recipe is originally from Stephanie Alexander’s ‘Cook’s Companion’
You will need:
- 3 eggs (separated)
- 2 cups of buttermilk (ideally at room temp)
- 60g melted butter
- 300g plain flour
- 1 tsp salt
- 1 tsp bicarbonate of soda
